Vegan hot coconut drink
Hemsley + Hemsley’s low-sugar take on a bedtime drink is an indulgent night-time treat.
- 2 tbsp carob (available from health food stores)
- 1 tsp vanilla extract
- ½ tsp almond extract
- 1-2 tsp date syrup (available from delicatessens or online specialists) or maple syrup
- 1-2 tsp maca powder (optional; available from health food stores)
- ¼ tsp salt
- 400g tin full-fat coconut milk
Blend all of the ingredients and 300ml/10½fl oz water together in a food processor until super-smooth and well combined.
Transfer the mixture to a pan and warm over a gentle heat.
Serve immediately in mugs.
