Sausagemeat stuffing

This sausagemeat and sage stuffing recipe is perfect for a Christmas turkey. Or just roll it into balls to serve alongside the Christmas dinner.


  • 1 large onion, chopped
  • 2 cloves garlic, crushed
  • 450g/1lb sausage meat
  • 1 tbsp chopped parsley
  • 2 tbsp chopped sage
  • 25g/1oz fresh white breadcrumbs
  • salt and freshly ground black pepper


  1. Preheat the oven to 200C/400F/Gas 6.

  2. Mix all the ingredients together. Either roll into balls or spread out evenly in a greased ovenproof dish. Bake for 30 minutes or until golden brown all over and cooked through.

Recipe Tips

If you are making this as a dairy-free recipe, take care to ensure the breadcrumbs are dairy free. Although many breads contain dairy, free-from options are widely available – just check the label.
