Masala omelette with parathas

Ingredients

  • ½ tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 green chillies
  • 1 large onion, finely chopped (200g)
  • 2 tbsp fresh coriander, roughly chopped
  • ½ tsp kashmiri chilli powder (or mild paprika)
  • ½ tsp ground turmeric
  • 4 free-range eggs
  • salt, to taste
  • 3 tbsp vegetable oil or butter, for frying
  • 1 tsp lemon juice, to serve

For the parathas

  • 250g/9oz chapatti flour, plus extra for dusting
  • 2 tbsp vegetable oil
  • 160–170ml water
  • knob of ghee or butter, melted
