Budget pigs in blankets
Using normal sausages and cutting them in half lengthways makes them go further and with the spring onion and bacon they taste extra delicious.
Ingredients
- 1 tbsp sunflower or vegetable oil
- 6 herby pork sausages, separated
- 6 spring onions, trimmed and halved
- 6 rashers smoked streaky bacon, halved
Method

Brush a large baking tray with the oil. Cut the sausages in half lengthways.

Take one sausage half and a halved spring onion and wrap in a piece of bacon. Place on the tray. Repeat with the remaining sausage halves, spring onion and bacon. Cover and chill in the fridge until ready to cook.

Preheat the oven to 200C/180C Fan/Gas 6. Bake the pigs in blankets for about 20 minutes, or until lightly browned and cooked through, turning after 10 minutes. Serve.
